Matzah Bark/Candy/Caramel Crack(ers)

    • Preheat oven to 350 degrees

    • Line a baking pan with tin foil and then with parchment paper.  Seems like a lot but I promise you’ll thank me when you’re trying to get it out.

    • Put about 5 sheets of matzah on the parchment paper in a single layer

    • On the stove combine: 1C salted butter, cubed (2 sticks) and 1C light brown sugar and bring to a boil.  once it starts boiling, let it boil another 3 minutes.

    • Take it off the heat, add a dash of vanilla and a pinch of salt if you want and pour it over the matzah.  Use an offset spatula to spread the caramel out – and quickly because it’ll start to set and harden immediately.

    • Pop it in the oven for 13ish minutes, just watch it to be sure it isn’t getting too too brown.

    • Once you bring it out, sprinkle 1.5C of chocolate chips on it, let stand 5 minutes and then spread it out with your offset spatula.  Throw whatever toppings you like on there!  Walnuts, dried fruit, whatevs.

    • ORRRRR do what I did today – use white chocolate melting wafers or white chocolate chips and just haphazardly throw dots of food coloring on it.  Once the 5 minutes is up, spread it around and see the colors combine!  Then I topped with white nonpareils and you know I’ll probably add edible glitter (see above).  Bam.  Unicorn Matzah Bark.
